After a tiring morning of taking the ACT, I decided to do a little baking to get my mind working again--those tests always make me brain dead ): I saw a pin on pinterest the other day for M&M Pudding Cookies and they looked AMAZING so I thought I should try them for a soccer dinner party tonight. I asked my brother to help me make these cookies and in return I promised him that he would get to try the cookie dough. He said the dough was amazing and he wanted me to make him another batch without the m&ms and chocolate chips because they "tasted better". Hopefully they taste good both ways! I cant taste them so I have no way of telling you guys what they taste like, so I will just have to get opinions from my soccer team (: 

The recipe is quite simple and fast! It only took me about 30 minutes from start to finish to bake these delicious little things. In the recipe I used, I substituted mini chocolate chips and m&m for normal sized ones (: I think if you use the mini ones the cookies come out flatter and a little bigger, but thick cookies are good too! Ingredients: 
  1. 1/2 cup butter
  2. 1/2 cup granulated sugar
  3. 1/2 cup brown sugar
  4. 1 egg
  5. 1/2 tsp vanilla
  6. 1 1/2 cup all purpose flour
  7. 3 tbsp instant vanilla pudding mix
  8. 1/2 tsp baking soda
  9. 1/2 tsp salt
  10. 3/4 cup chocolate chips
  11. 3/4 cup M&M ( or 3 individual sized bags) 
Directions:
  • Preheat oven to 350F and line 2 cookie sheets with parchment (oven) paper. 
  • Combine butter and both sugars in a bowl and cream until well combined. 
  • Beat in the egg and vanilla until combined.
  • Add flour, pudding mix, baking soda and salt into the batter and mix together until you get a consistent dough.
  • Once you get a consistent dough, add the chocolate chips and M&Ms and stir together by hand
  • Spoon out the dough into 1 -1 1/2 inch balls and place on the cookie sheets. 
  • Bake in the oven for 15 minutes. (the original recipe said 10, but my cookies weren't done at that time so I let them cook longer)
